If you follow me over on Instagram, then you probably already know that I'm totally obsessed with my instant pot (this is the one I use). The kid's schedules, now that school is back in session, are keeping us all super busy, and the mornings are just too hectic to be messing around with my crock pot. The quicker and easier it is for me to get dinner on the table, the better. You also may or may not know that I am currently on Weight Watchers and have been having pretty good success with it over the last few months. Part of that success has come from meal planning, making better food choices, and taking advantage of the Freestyle program's zero point food list!
In the fall and winter I love to make a pot of soup on Sundays so that I can enjoy the leftovers for lunch all week long. I also happen to love Mexican food, and seeing as chicken, black beans, corn, etc. are all on the Freestyle zero points list, I decided that I wanted to attempt a zero point soup that would fill me up, but still leave me with lots of points to enjoy the rest of the day! Thanks to some help from the instant pot, this soup comes together in no time at all!

1 pound boneless skinless chicken breast (about 3 breasts)
1 32 ounce box fat free chicken broth
1 can Rotel
1 15 oz. can of tomato sauce
1/2 medium red onion, diced
1 tsp cumin
1 tsp garlic powder
1/2 tsp chili powder
1 can black beans
2 cups of frozen corn
1. Add broth, Rotel, tomato sauce, chicken, red onion and spices to Instant Pot.
2. Pressure cook for 20 minutes.
3. With instant pot on warming mode, manually release steam, and add corn and black beans. Stir and allow to sit for a few minutes.
4. Serve. I added a dollop of non-fat greek yogurt (0 points) and 1 Tbs reduced fat shredded cheddar (1 point).
This was originally a lemon cake that i got from my Auntie Shirl in the 70's. Because of my habitual tweaking nature and the fact i love lime, this is what i always fall back on, it's quick, easy, i always have the ingredients on hand =)

LIGHT LEMON CAKE TRIFLE - WEIGHT WATCHER FRIENDLY
This dessert came about totally by accident! I was trying to make one of the many WW cakes that use diet soda and cake mix into muffins. I didn't use liners and didn't spray my muffin tin with enough Pam, and they stuck miserably! So I looked in my fridge to see what I had on hand, and threw this together to layer. It really turned out pretty, and was delicious too! I highly recommend Waist Watchers soda in any cake you make. It is sweetened with Splenda and every flavor is calorie free, aspartame free, caffiene free, sodium free, and fat free. It actually costs less than other diet sodas too! I have only made this once on the spur of the moment, so feel free to make any adjustments needed. Feel free to try white or yellow cake with different flavors of yogurt and diet soda as well. It could also probably be made with a regular cake mix, but would make more like 20-24 servings than the 16 by using 2 Jiffy boxes. Thanks to Kittencal and recipe#79506, I have found a way to keep the yogurt in recipes from becoming runny and watery! I don't know if this would work using flavored Jello, but next time I make it I might try using the sugar free lemon Jello to give even MORE lemon flavor!

Combine cake mix, egg white, and diet soda.
Mix on low speed 1 minute, then medium for 1 minute or until smooth.
Pour into 1 cake pan or 6 muffin tins that have been well sprayed with Pam, or lined with nonstick foil or parchment paper.
Bake at 350 degrees for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool completely.
Meanwhile, in a small saucepan, combine the teaspoon of gelatin with the 4 teaspoons of water. Let stand until thick. Place over low heat, and stir until gelatin dissolves. Cool, but do not allow to set up.
Place yogurt in a mixing bowl. Slowly stream in the cooled gelatin while beating over low speed. Add 1/2 of the container of whipped topping, and beat on high speed for 1 minute until thickened. Add 1 drop (or more)of yellow food coloring if desired. If this mixture is too tart, you may add 1/4 teaspoon Splenda, or your favorite artificial sweetener, to taste.
Crumble 1/2 of the cooled cake into a serving dish or divide evenly into parfait glasses. Top with 1/2 of the yogurt mixture. Spread 1/2 of the whipped topping over the yogurt. Repeat layers.

When you're working with a compact living room, large-scale furniture often isn't an option. Be realistic about the space. For example, if an oversized recliner won't fit, choose a pair of smaller chairs. Many people also get hung up on common furniture configurations. For example, nothing says that you need a full-sized sofa in your living room. A love seat paired with a bench and an armchair may work more naturally in your space.
Think Multifunctional
Choosing multifunctional pieces will also make the most of your living room. For example, a bench with storage will provide seating while housing pillows and blankets. A coffee table or console table makes a great addition to a living room but only when it makes sense for the space. Your small living room may be better suited for two small tables that open up the space and can be moved as needed to accommodate different functions.
Consider Floating Furniture and Low Seating
Floating furniture and low seating can make all the difference when it comes to keeping the space open and flowing.
